Alcohol is sometimes left out of the picture when we think about a more environmentally friendly lifestyle, but studies show that it is a large part of our carbon footprint. Hong Kong’s Penicillin is trying to change that. 🍸🌱🌏 The bar might be only a year old, but it has already won Asia's 50 Best Sustainable Bar Award. Operating with a lab, kitchen, and a fermentation room, Penicillin recycles ingredients that would typically end up in the bin such as reusing avocado pits from a Mexican eatery as ice cubes. It also uses local ingredients to reduce carbon emissions and plants trees in Borneo when certain cocktails are purchased. Penicillin also operates a closed-loop production through EcoSPIRITS, a Singapore-based low carbon spirits distribution system that claims to nearly eliminate packaging waste in the spirits supply chain.
